Our Mothais sur feuille is a raw milk goat cheese that takes its name from Mothe-Saint-Héray.
The chestnut leaf which surrounds it participates in the development of the aromas. It absorbs moisture from the cheese and gives it a softer, creamier paste and a thinner rind.
