Raw milk goat cheese is characterized by its thin beige, wavy and yeast rind.
Le Crottin takes its name from the Berry term "crot" which means "hole".
Formerly the crots designated the places located at the edge of the rivers where the linen was washed. The clayey earth that made up these banks was used to make cheese molds to drain the curds.
You can taste it in a tart with goat cheese and cherry tomatoes for example.
